    1-1/2 pounds ground beef
    3/4 cup onion, finely chopped
    1/3 cup cracker or bread crumbs
    1 egg, slightly beaten
    3 tablespoons milk
    1 tablespoon chili powder
    3/4 teaspoon salt

    POTATO TOPPING:
    3 cups prepared mashed potatoes (I usually use instant)
    1 can (11 ounces) whole kernal corn with red and green peppers, drained - or equivalent amount of frozen corn, thawed
    1/4 cup green onions, thinly sliced
    1/2 to 1 cup shredded taco seasoned cheese

    Recipe



    In large bowl, combine the first 7 meatloaf ingredients. Press into bottom of 9-inch square or 8x11-inch pan. Bake 20 to 25 minutes in 375 degree oven until center is no longer pink. Carefully pour off drippings. Combine all topping ingredients except cheese. Spread over meatloaf; sprinkle with cheese. Broil 3 to 4 inches from heat 3 to 5 minutes until lightly browned.

    Makes 6-8 servings.
