    Creamy Curry Chicken and Rice Casserole

    1 cup cooked rice
    1/ cup oil[do not use olive oil]
    1 onion chopped
    2 tbs minced garlic
    3-4 tsp curry pdr
    1 tsp salt
    1/4 cup flour
    2 cups half and half cream
    2 cups frozen peas
    3-4 carrots finely chopped
    1 red bell pepper chopped
    1 tbs lemon juice
    3 cups cooked chicken breasts chopped

    Set oven to 375o
    Pam an 8x8" baking dish
    Saute onion, salt garlic and curry for 4 min
    Whisk in the flour
    Add in half and half 1/4 cup at a time,bring to a boil then reduce the heat immediately and continue cooking whisking frequently until sauce thickens
    Combine rice peas carrots bell pepper lemon juice and cooked chicken
    Add to the suace in the fry pan and mix well
    Season with pepper to taste
    Transfer mixture to baking dish
    Cover with foil and bake for 30 min
    Uncover and bake for another 10 min
