    12 oz. shredded hash browns, thawed
    4 eggs
    2 c. milk
    1 T. dried minced onion
    1/8 t. pepper
    1/2 t. seasoned salt
    1 c. (4 oz.) shredded cheddar
    12 oz. frozen fish sticks (about 18)

    Recipe



    Beat eggs and milk together. Stir in onion, pepper, and seasoned salt. Add cheese and hash browns and pour into greased 7" x 11" pan. Put fish sticks on top and bake, uncovered, at 350º for 50 minutes. Let stand 5 minutes before cutting.

    I used southern style hash browns (about half of a 32 oz. pkg.) and cooked it in an 8" x 8" pan, and added about 10-15 minutes to the time. You can also add 1 t. dried dill to the potatoes if you want. My whole family told me it was good--even the picky ones! My son did tell me he wasn't fond of the fish sticks, but that the rest was good. Next time I might try it with frozen chicken fingers.
