    Green Bean-Artichoke Casserole Plus

    Source of Recipe

    Internet

    List of Ingredients

    2/3-Cup Olive Oil
    1 Medium Onion, finely chopped
    3 Toes of Garlic, chopped
2 Regular-sized Cans of Artichoke Hearts, drained and chopped
    1 Cup Italian-style Bread Crumbs
    1 Cup Grated Parmesan Cheese
    1 Cup Grated Romano Cheese
    1/4 Cup Parsley, chopped
Crushed Red Pepper Flakes, to taste
    Salt and Pepper, to taste

    Recipe

    Preheat oven to 350-degrees Fahrenheit.

Saute garlic and onions in olive oil until transparent. Add green beans and cook for 5 minutes. Add artichoke hearts, bread crumbs, cheeses, and parsley, mixing well after each addition. Season to taste with crushed red pepper flakes, salt, and pepper.

Place in a covered dish and bake 20 to 25 minutes until the mixture becomes bubbly. Remove cover and continue baking for an additional 5 minutes (or until light golden brown).

    Another Version

1 Cup Olive Oil (yes....1 cup)
    1/2 Onion, chopped
    4 Cloves of Garlic, minced
2 Cans French-style Green Beans (drained)
1 Can Artichoke Hearts, chopped into eighths (reserve liquid)
    2 Cups Italian-style Bread Crumbs
    1 Cup grated Parmesan Cheese

Heat the Olive Oil in a large skillet or pot and saute the chopped Onion and Garlic.

Add the drained Green Beans and the chopped Artichoke Hearts and saute those for a few minutes, stirring occasionally.

Add the Bread Crumbs and Parmesan Cheese. Mix and stir. If the mixture is too dry, add some of the reserved juice from the can of artichoke hearts.

Taste. Add seasoning, such as garlic powder, if needed, and mix again. Remove from heat and place mixture in a serving bowl. This is an intense dish, but tastes good.
