    1 pound lean ground beef
    1 pkg. Taco Bell taco seasoning
    1 pkg. frozen pepper stir-fry mix (red and green bell pepper strips and onion)
    1 small pkg. frozen corn (NOT ON THE COB) (about 2 cups)
    1 pkg. Jiffy corn muffin mix
    1 egg
    ½ cup milk
    1-2 cups shredded cheese (Mexican blend works well)
    1 can Ranch Style beans

    Needed - Big skillet, 2-inch deep baking pan and a preheated oven (350 to 400 degrees).

    Cook the ground beef in a skillet until browned (done) and drain any excess grease. Stir in the taco seasoning with ¼ cup water until dissolved. Add the corn, the stir-fry mix, and the canned beans - stir until hot and bubbling. Cook until there is no standing liquid in the pan. Pour into greased 9x13 baking pan. Mix up Jiffy corn muffin according to recipe with the egg and milk. Spoon over beef mixture-DON'T stir it in. Sprinkle cheese heavily on top. Place in oven and bake until corn bread topping is golden brown and cheese is well melted (usually takes 20 to 30 minutes from start to finish).
