    Sour Cream Chicken Enchiladas Delight

    3 1/2 cups sour cream
    3 5 oz cans chicken (about 2 cups) or 1 lb fresh chicken
    2 4 oz cans mushrooms (optional)
    2 4 oz cans green chilies, drained
    1/3 cup onion flakes
    1 tsp chili powder
    1/2 tsp salt
    1 tsp garlic powder
    12 flour tortillas
    1/3 lb cheddar cheese

    Recipe



    In a 13 x 9" baking pan, spread sour cream and set aside.
    In fry pan, add 1/2 cup sour cream, chopped chicken, mushrooms, green chilies, onion flakes, chili powder, salt, and garlic powder. Cook over low heat, stirring occasionally, just until chicken is cooked.
    Preheat oven to 450. You can fry the tortillas to soften (I don't).

    Place chicken mixture inside tortilla and roll. Place seam side down in sour cream pan.
    Repeat. Spread enchiladas with sour cream and sprinkle with cheese.

    Bake about 8 minutes or until cheese is melted.
