    Spinach-Artichoke Casserole

    1/2 cup onion, chopped
    1/2 cup butter
    2 (10-oz.) pkgs. frozen chopped spinach, thawed and drained
    1 (14-oz.) can artichoke hearts (in water), drained and coarsely cut
    1/2 cup grated Parmesan cheese
    1 cup sour cream
    1 (4-oz.) can mushroom pieces
    1/4 tsp. red pepper
    Salt to taste (taste first)

    Saute onion in butter. Combine remaining ingredients; add to sauteed onions. Bake in deep, covered casserole at 350 degrees for 25 minutes. Serves 6. Note: May garnish with pimiento strips or finely chopped green onion, green part.
