Taco Spaghetti

Recipe Introduction
Makes 2 casseroles,one for now and one to freeze.
List of Ingredients
10 oz spaghetti broken
2 lbs gound beef
2 lge onions chopped
1 1/2 cups water
1.25 oz pkg taco seasoning mix
2[11 oz] cans of corn mixed with chopped peppers drained
1 1/2 cups Colby Monterey Jack cheese or Cheddar cheese grated
1 cup favoutite salsa
2[4.4 oz] cans chopped green peppers drained
4 cups lettuce shredded
1 med tomato chopped
Recipe
Cook pasta according to pkg directions drain
Meanwhile cook meat and onion until meat is brown in a Dutch oven
Drain off any fat
Stir in water and taco seasoning mix
Bring to a boil reduce heat
Simmer uncovered for 2 min stirring occasionally
Stir in cooked pasta,corn,1 cup of the cheese,salsa and chili peppers.
Divide mixture evenly between two pammed casseroles
Freeze one if you wish
To serve remaining casserole cover and bake in a 350o oven for 20-25 min
Sprinkle with remaining cheese
Top with lettuce and chopped tomato
If desired pass broken tortilla chips and sour cream as additional toppings
To serve second casserole thaw in fridge overnight
Bake covered at 375o for 1 hour stirring once about halfway through cooking time
Sprinkle with 1/2 cup cheese
Serve with 4 cups shredded lettuce and 1 med tomato chopped
