    Zucchini-Cheddar Casserole

    6 cups zucchini- sliced
    1 cup sour cream
    2 eggs DIVIDED
    2 TBSP flour
    1 1/2 cups Cheddar chese- shredded
    6 slices bacon- cooked and crumbled
    1/2 cups bread crumbs
    1 TBSP butter or margerine- melted

    Recipe



    Cook zucchini in a small amount of salted water until tender (about 10 minutes). Drain and sprinkle with salt.
    Lightly beat the egg yolks and mix with the sour cream and flour. Beat egg whites until stiff and carefully fold into sour cream mixture. In a 12x7 baking dish layer half of the zucchini, half of the sour cream mixture and half of the cheese. Repeat once more. Combine crumbs and butter. Sprinkle over the top of the caserole. Bake uncovered at 350 degrees F for 20-25 minutes.
    Serves 6-8
