Zucchini Tomato Casserole

¼ cup oil
1 clove garlic, finely minced
4 medium zucchini, cut into ¼ inch slices
¼ tsp oregano
¼ tsp basil
½ cup cheddar cheese, grated
4 medium tomatoes, peeled and sliced
Salt and pepper to taste
½ cup breadcrumbs
2 tbsp butter, melted
Recipe
Preheat oven to 350 F. Heat oil in skillet, add minced garlic and cook 5 to 6 minutes until oil is flavored. Remove garlic and sauté zucchini slices in flavored oil until just tender. Combine oregano, basil and cheddar cheese. Place alternate layers of zucchini and sliced tomatoes in a buttered 1 ½ quart casserole dish. Sprinkle each layer lightly with salt, pepper and cheese mixture. Combine breadcrumbs with melted butter; sprinkle on top of the casserole. Bake, uncovered, until the crumbs are browned, about 20 to 25 minutes.
