Banana Chocolate Chip Drop Cookies

2 1/4 cups sifted flour
1 cup sugar
2 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
2/3 cup shortening (I use Crisco)
2 eggs
1 cup mashed FULLY RIPE bananas (usually 2 to 3 bananas: Throwing them in a blender does a really nice mash job)
1 tsp vanilla
1 (6 oz) pkg semi sweet chips
Topping:
1/4 tap cinnamon
1 Tbsp sugar
Recipe
Sift together first 5 ingredients. Cut in shortening. Add eggs, bananas and vanilla and beat until blended. (I usually toss the eggs in the blender with the bananas after I've mashed them and just give it a final whirl). For Chocolate Chip Cookies, add 6 oz semi sweet chips (this is the *only* way to do it as far as I'm concerned :).
Drop by teaspoon about 1 1/2 inches apart onto ungreased cookie sheets. Sprinkle with a mixture of 1/4 tsp cinnamon mixed into 1 Tbsp sugar.
Bake in moderately hot oven (400F) about 12 minutes or until cookies are done. Remove cookies from pan immediately.
Makes about 3 dozen (2 1/2 is more like it, I think) medium sized cookies.
