Chocolate Nut Shortbread Cookies

½ cup butter, right from refrigerator
½ cup vegetable shortening or margarine
1 cup sugar
2 cups all-purpose flour
One-quarter cup cocoa
½ teaspoon salt
1 tablespoon vanilla
1 cup finely chopped pecans, macadamias or hazelnuts
Vegetable oil cooking spray
Recipe
Preheat oven to 325 degrees. Chop the butter into chunks. Cream with the margarine and sugar until very fluffy, about 3 minutes with an electric mixer.
Whisk the flour, cocoa and salt together in a bowl, then add to creamed mixture, beating just until well blended. Blend in the vanilla, then the nuts.
Form into 1-inch balls. Flatten with a glass onto baking sheets that have been lightly coated with vegetable oil spray. Bake 12 to 15 minutes, until firm to the touch. Remove from cookie sheets and cool on wire racks.
Makes about 3 dozen cookies.
