    4-1/2 cups flour
    4 tsp ground ginger
    2 tsp baking soda
    1-1/2 tsp ground cinnamon
    1 tsp ground cloves
    1/4 tsp salt
    1-1/2 cup shortening*
    2 cups granulated sugar
    2 eggs
    1/2 cup molasses
    3/4 cup coarse sugar or granulated sugar

    Preheat oven 350°
    In med bowl stir together flour, ginger, soda, cinnamon, cloves & salt. Set aside.
    In lg bowl beat shortening with electric mixer on low speed for 30 seconds to soften.
    Gradually add 2 cups granulated sugar; beat until fluffy.
    Add eggs and molasses; beat well.
    Add 1/2 flour mixture, beat until combined.
    Stir in remaining flour mixture with wooden spoon.
    Shape dough in 2" balls using 1/4 cup dough for each ball.
    Roll in coarse sugar/granulated sugar.
    Place balls 2-1/2" apart on ungreased cookie sheet.
    Bake for 12-14 minutes or until cookies are LIGHT brown and puffed. (Do not overbake or they won't be soft and chewy).
    Let stand for 2 minutes before transferring to a wire rack to cool
    Makes 25 4" cookies

    Note: Be sure and use shortening to ensure proper rising. Can use regular or butter-flavored shortening
