    Inspired by the elaborate South Carolina cake made famous in Owen Wisters 1906 novel, "Lady Baltimore," these delicate cookies are pure gems. It was one of dozens created for a tour of the nation in cookies for Christmas Cookies Magazine.

    1/2 cup butter or margarine
    2 cups all-purpose flour or wholewheat pastry flour
    3/4 cup sugar
    1/3 cup milk
    1 1/2 teaspoons finely shredded lemon peel
    1 teaspoon almond extract

    Lady Baltimore Cookies

    Prep: 45 min. Marinating: 1 hour Baking: 10 min.

    1/2 cup shortening
    1/2 cup butter or margarine
    2 cups all-purpose flour or wholewheat pastry flour
    3/4 cup sugar
    1/3 cup milk
    1 1/2 teaspoons finely shredded lemon peel
    1 teaspoon almond extract
    Lady Baltimore Frosting*
    Preheat oven to 375°.

    Beat the shortening and butter in a large bowl using an electric mixer on medium to high speed for 30 seconds until softened. Add half of the flour; beat in the sugar, milk, lemon peel, and almond extract. Beat in rest of flour till thoroughly combined. Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheets. Bake in a 375° oven for about 10 minutes just until lightly brown. Remove cookies with a spatula and cool on wire racks. Frost with Lady Baltimore Frosting.

    Makes about 48.

    * Lady Baltimore Frosting: Chop 4 dried black figs and 1/3 cup raisins; place in a small bowl with 2 tablespoons brandy or rum. Let sit at least an hour. Place 2 egg whites, 1/2 cup sugar, pinch salt, and 1/4 cup light-colored corn syrup into the top of a double boiler over gently simmering water. Beat with an electric mixer on high for 7 minutes till soft peaks form. Beat in 1 teaspoon vanilla and continue to beat till spreading consistency. Stir in reserved fruits and 1/3 cup finely chopped pecans.
