3 egg whites (at room temperature)
1/4 teaspoon cream of tartar
3/4 cup sifted granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup chopped walnuts
4 squares bittersweet chocolate, coarsely grated
Recipe
Preheat oven to 250 degrees. Beat egg whites with cream of tartar until the whites stand in moist peaks. With the mixer running, slowly add the sugar. Then with a spoon, fold in extracts, nuts and chocolate. Drop teaspoons of the mixture 2 inches apart on a greased cookie sheet. Bake for 30 minutes, or until firm to the touch. Cool on a wire rack. Makes about 3 dozen cookies.
