Mincemeat Bars

2 tablespoons unsalted butter, melted
1/2/ cup honey
2 eggs, lightly beaten
1/2 cup mincemeat
3/4 cup chopped, toasted walnuts
1 cup flour
1/4 teaspoon baking powder
Pinch salt
Sifted confectioners’ sugar, for coating
Recipe
Preheat oven to 350 degrees. In a medium bowl, combine melted butter, honey and eggs. Whisk well. With a wooden spoon, stir in mincemeat and walnuts; set aside.
In a bowl, sift together flour, baking powder and salt. Add to mincemeat mixture and stir to blend.
Spread dough evenly in a greased 8-inch-square pan. Bake until cookies are lightly browned and feel firm when touched gently (about 25 minutes). Remove to a wire rack and let cool 10 minutes. Cut into 16 (1-by-4-inch) bars, trimming away uncut edges. While bars are still warm, drop into confectioners’ sugar and roll to cover all sides generously. Finish cooling on wire rack. Store in an airtight container.
