    1/4 pound butter
    1/4 cup ricotta cheese--not fat free
    1 teaspoon vanilla`
    1 teaspoon lemon extract
    1 cup sugar
    1 egg
    2 cups sifted flour
    1/2 teaspoon baking soda
    1/2 teaspoon salt

    Recipe



    Allow butter to soften at room temperature. The blend with ricotta until creamy. Add extracts. Mix well. Add sugar gradually, beating until well-blended. Add egg and mix well. Slowly stir in dry ingredients and blend well. Drop from a teaspoon onto a greased cookie sheet. Bake at 350 degrees for 10 minutes. The cookies will not be brown. They should be sort of firm to the touch. Remove from oven, cool 1-2 minutes before removing to wire rack to completely cool. Be sure they are stone cold before storing in an air tight container. (If they aren't completely cold, when you put them in the closed container, they will stick together.)
