    SOUR CREAM RAISIN BARS

    • 2 cups raisins, water to cover
    • 1 cup margarine
    • 1 cup brown sugar
    • 1 ¾ cup quick oatmeal
    • 1 ¾ cup flour
    • 1 teaspoon soda
    • 1 cup sugar
    • ¼ teaspoon salt
    • 3 tablespoons cornstarch
    • 1 teaspoon vanilla
    • 1 cup sour cream*
    • 3 egg yolks


    Recipe



    Cook raisins in water until soft, about 2 minutes. Drain and set aside.


    Cream the margarine and brown sugar. Add oatmeal, flour and soda. Pat ½ of the mixture in 9 x 13 pan and bake at 350 degrees for 10 minutes.

    Blend together sugar, salt, cornstarch, egg yolks, and sour cream. Cook over low heat until mixture boils. Stir constantly as it burns easily. Remove from heat and add vanilla and raisins. Mix well.

    Pour over crust. Sprinkle on remaining crumbs.

    Bake at 350 degrees for 30 minutes.


    *You may use low fat or fat free sour cream. The bars will not be as rich but are still delicious.
