2 ½ cups flour
1/3 cup sugar
1 teaspoon vanilla extract
2 sticks (1 cup) butter, softened, plus extra for cookie sheet
Raspberry jam
Icing (recipe follows)
Green food coloring
Cinnamon candies
Recipe
Mix flour, sugar, vanilla and butter in a mixing bowl. Work dough until smooth. Divide and roll into 2 equal logs slightly less than 2 inches in diameter. Chill in refrigerator for 1 hour.
Preheat oven to 350 F. Butter a cookie sheet. When dough is firm, cut into thin slices and bake on prepared sheet for 8 to 10 minutes.
Cool. Spread one-half of the cookies with about 1 teaspoon of raspberry jam each. Place another cookie on top. Spread top of each cookie "sandwich" with icing. While icing is still wet, drop 3 cinnamon candies on each cookie.
After icing dries, paint holly leaves on with a thin paintbrush dipped in green food coloring. Makes 20 sandwich cookies.
Icing: In a small bowl, stir together 2 cups confectioners' sugar, 1/2 teaspoon vanilla and 2 to 3 tablespoons milk to desired glaze consistency.
