    1/2 lb. thick cut bacon cut into 1/2-inch strips
    4 cups chopped onion
    3 cups chopped celery
    1 cup chopped dried apples
    1 Tbsp. chopped fresh thyme
    1-1/2 tsp. dried rubbed sage
    2 (7.4 oz.) jars roasted whole chestnuts, broken
    8 cups dried cornbread stuffing
    1-3/4 cups chicken broth
    2 Tbsp. butter, melted

    Pre-heat oven to 350ºF. Cook bacon until brown and crisp; set aside. Pour off all but 2 Tbsp. bacon drippings and add onions and celery. Cover and cook over med. heat until vegetables are tender; combine in a large bowl with bacon, then mix in apples, thyme, sage and chestnuts. Stir in cornbread stuffing and broth; drizzle with butter. Bake in a buttered dish for 40 minutes, then uncover and brown for 20 minutes.

    Yields 10 to 12 servings.
