    2 medium onions, chopped
    2 carrots, pared and sliced
    3-4 1/2 lb. pork loin or pork shoulder roast
    2 tsp. salt
    1/2 tsp. leaf oregano
    1/2 tsp. cumin seed
    1/2 tsp. coriander
    2 cups water

    Recipe



    Place onions and carrots in Crock-Pot. Rub pork with seasonings. Place pork on top of vegetables, add water. Cover and cook on low setting for 8 to 12 hours. Cook until fork tender and the meat can be shredded. The shredded meat can be used in tacos, burritos, quesadillas, etc.
