    Posole is a traditional Mexican dish from the pacific coast region of Jalisco. A thick soup that's usually made with pork, garlic, onion, chili peppers, and broth.

    List of Ingredients




    1 package (32 oz.) frozen posole
    2-1/2 quarts water or more
    2 large onions, thinly sliced
    4 whole garlic cloves, crushed
    1 can (28 oz.) crushed tomatoes
    1 lb. lean pork or beef
    2 Tbsp. dried red chili
    1 Tbsp. dried oregano

    Recipe



    Cook posole in water in crock pot for several hours until corn pops. Add remaining ingredients and allow to simmer slowly until meat is tender. During cooking, continue to add more water to stew, if necessary and stir occasionally.
