    Wild Beer Cheese Soup

    Put in a Crock-Pot at high setting or soup kettle at medium setting:
    2 cans of chicken broth
    1C chopped carrots
    1/2 C chopped broccoli
    3/4 C chopped celery
    1 and 1/2 C cooked chicken or turkey

    Sauté in Large frying pan:
    2T extra virgin olive oil
    1 Large chopped onion
    8 oz. sliced mushrooms (add after onions are soft)

    Add to frying pan:
    2 cans potato soup
    1 can of water
    1 bottle or can of Leinenkugel's Honey Weiss Beer (Red for a heartier flavor)

    Once frying pan mixture is hot add:
    8 oz. cubed Velveta Cheese (I would use 16oz. next time)

    Add frying pan mixture to crook pot or soup kettle once cheese is
    completely melted and set on low

    Add to Crook Pot:
    3 C cooked wild rice (or 3/4 C of uncooked wild rice, if you choose this
    option soup will become thicker...this is how I made it and liked it)
    1 & 1/2 t basil
    1 t Worcestershire sauce
    salt and pepper to taste

    Cook on low for 2 hr
