    Almost Italian Cream Cake

    1 package Extra Moist Yellow Vanilla cake mix
    3 eggs, separate yolks and whites
    1-1/4 cup water
    1/3 cup vegetable oil
    1 cup flaked coconut
    1 cup chopped pecans
    1/2 teaspoon almond extract

    Recipe



    Prepare cake as directed. Stir in coconut, chopped pecans and almond extract. (You may reduce fat by using 1 whole egg and 4 egg whites.)

    Pour batter into two 9-inch round pans. Bake at 350 degrees for 24 to 29 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and allow to cool.

    Cut once or twice, to create layers. Allow layers to cool separately.

    Cream Cheese Frosting

    1 (8-ounce) package reduced fat cream cheese
    1 stick margarine
    1 box powdered sugar
    1 teaspoon vanilla

    Allow cream cheese and margarine to return to room temperature. Beat well until smooth and well blended. Spread between layers and on top and sides of cake. Sprinkle top with additional chopped pecans, if desired.

    Serves 12
