    1 baked pastry pie shell
    1 can condensed milk
    4 egg yolks
    1/2 cup key lime juice

    Recipe



    Place condensed milk, egg yolks and key lime juice in small bowl and beat on low until well blended. Beat 1 egg white until stiff and fold into above mixture.
    Pour into cooled pastry shell. Top with meringue and bake until whites are golden brown in color in a 350 degree oven for 15 minutes. Cool on rack for 1 hour. Chill 3 to 6 hours before serving. Serves 8

    Meringue: In a large mixing bowl beat 3 egg whites and gradually add 6 tablespoon sugar and 1/2 teaspoon cream of tartar, beating until soft stiff peaks form. Immediately spread meringue over filling, carefully sealing to edge of crust to prevent shrinkage.
