    2-1/2 cups all purpose flour
    1-1/2 cups sugar
    2-1/2 tsp baking powder
    2/3 cup butter
    2 beaten eggs
    1/2 cup milk
    1/2 tsp lemon extract
    1/2 cup finely chopped pecans,
    walnuts or almonds

    Grease & lightly flour 9"x5"x3" loaf pane; set aside. In a medium bowl, combine flour, sugar & baking powder. Cut in the butter to resemble coarse crumbs. Set aside 1/2 cup.

    Mix eggs, milk & lemon extract; add to remaining crumb mixture along with the nuts. Stir till combined (batter will be thick). Spread in prepared pan. Top with reserved crumb mixture. Bake at 350F for 55-60 minutes or till toothpick comes out clean. Cool on wire rack for 10 minutes. remove from pan & cool completely.
