    Paul Sorvino Ricotta Cheese Cake

    Preheat oven to 350F Spray 9x13 pan

    Mix together and set aside:
    1 lb. ricotta cheese (not non-fat)
    3/4 c. sugar
    3 eggs, beaten

    1 Pillsbury yellow or lemon cake with pudding in the mix Prepared cake mix according to directions. Place in prepared pan. Carefully spoon ricotta mixture over batter. Cook 45-60 minutes. I like to check at 45 min. When set remove from oven. Cool completely on rack. Dust with powdered sugar. Cut into squares.

    This is a moist and wonderful cake. Keeps well in refrigerator. Can be made several days ahead if you are having a party. Cheese becomes the bottom layer.
