3 cups of flour
2 cups of granulated sugar
2 teaspoons of baking powder
2 teaspoons of baking soda
2 teaspoons of cinnamon
1/2 teaspoon of salt
1 cup of salad oil
2 cups of carrots, unpeeled and grated
4 eggs
1 small can of crushed pineapple
1 teaspoon of vanilla
1/2 cup of nuts

Combine in a large bowl salad oil, carrots, eggs, pineapple and vanilla. Add the sifted dry ingredients. Stir well. Add chopped nuts, if desired. Bake in an angel food cake pan, ungreased, for about 1 hour, 15 minutes in a 350ºF. oven.
