    2 Tbsp. sweet butter
    3 eggs
    1/2 cup sugar
    1 tsp. pure vanilla extract
    1/2 cup sifted cake flour

    Butter two 8 inch layer cake pans, and line the bottom of the pans with waxed paper; butter again. Preheat oven at 350º

    Melt 2 Tbsp. butter, set aside to cool.

    Place eggs, sugar and van extract in a large mixing bowl. Beat at highest speed until it stands in peaks. Using a rubber spatula, fold in the flour gently by spoonfuls (Important..be careful notto over mix batter, you want a light and airy cake batter). Sprinkle melted butter over batter and blend in gently.

    Pour into pans and bake for 40 minutes. Cool off cake. Turn out carefully, peel off paper.

    Frost as desired.
