    1 cup shortening
    1 3/4 cups sugar
    1 teaspoon vanilla
    3 eggs, separated
    1 cup cold water
    1/3 cup pureed tomatoes
    2 1/2 cups cake flour
    1/2 cup dry cocoa
    1 1/2 teaspoons baking soda
    1 teaspoon salt


    Recipe



    Preheat oven to 350 degrees.

    Cream together, one at a time, shortening (we used half butter, half margarine), sugar, vanilla and egg yolks.

    Sift together the cake flour, cocoa, baking soda and salt. Add to the creamed mixture, alternating the cold water and pureed tomatoes with the dry ingredients; beating well after each addition. (We used two Italian plum tomatoes, which we peeled, seeded and pureed in the food processor.)

    Beat egg whites until stiff peaks form. Fold into batter.

    Bake in two greased and floured 8 1/2-inch round pans (we used a 9-by-13-inch loaf pan) at 350 degrees for 35 to 40 minutes. Frost with chocolate butter frosting. Top with strawberries. (or use pecans.)
