    1½ cup sugar
    ½ cup water
    6 eggs, beaten, separate whites
    ¼ tsp. salt 1 cup cake flour
    ¾ tsp. cream of tartar
    1 tsp. lemon or orange extract

    Boil sugar and water until it threads when dropped from the tip of spoon. Pour the hot syrup in fine stream on the beaten whites to which salt has been added, beating mixture until cool, then add the well beaten egg yolks. Sift the flour once, measure, add the cream of tarter, and sift again three times. Fold very carefully into the egg mixture, add extract, pour into an ungreased angel pan and bake 50 to 60 minutes in moderately slow oven. When done, invert to cool.
