    Norm Benner's Better Half Cheesecake

    1 pound cream cheese
    1 pound creamed cottage cheese
    1-1/2 cups sugar
    4 eggs
    Juice of one lemon (1.5 Tablespoons)
    1 Tablespoon vanilla
    3 Tablespoons flour
    3 Tablespoons cornstarch
    1/4 cup melted butter
    1 pint sour cream

    Heat oven to 325 degrees. Grease a 10-inch springform pan well. Cream cheeses in large bowl; add sugar, continually beating. Beat eggs in a separate bowl until light and fluffy and add to the cheeses, beating until smooth. Stir in lemon juice, vanilla, flour, and cornstarch. Add melted butter and mix until smooth. Blend in sour cream and beat well. Pour into the greased springform pan.

    Bake for one hour. Turn the oven off and allow the cake to remain in the oven for two hours longer. DO NOT open the oven door the entire 3 hours!

    Let the cake cool about 6 hours before taking the sides off of the pan. Keep refrigerated until served. This will keep for 10 days unfrozen.
