    Crust:
    2 cups peanut butter cookie crumbs
    1/2 cup finely chopped pecans, toasted
    2 Tbs. sugar
    4 Tbs. unsalted butter, melted

    Filling:
    1 1/2 cups heavy cream, chilled
    12 oz. cream cheese, softened
    3/4 cup superfine sugar
    2 cups smooth peanut butter
    1 Tbs. pure vanilla extract

    Choc. Cream:
    3/4 cup semi sweet chocolate chips
    2 Tbs. heavy cream
    1/2 cup coarsly chopped roasted unsalted peanuts, for sprinkling

    Recipe



    1. Make the crust: In a large bowl, combine the cookie crumbs, pecans, and sugar. Stir in the melted butter until combined. Press the crust over the bottom and up the sides of the pie pan. Put the pan in the freezer for 1 hour.

    2. Make the filling: Put the heavy cream in a chilled bowl and beat using the mixer on medium speed until stiff peaks form.

    3. Put the cream cheese and sugar in a bowl and beat until smooth using the mixer on medium speed. Scrape down the bowl. Add the peanut butter and vanilla, and beat until combined. Fold in half of the whipped cream gently but thoroughly, then fold in the remaining whipped cream until completely combined.

    4. Spoon the filling into the frozen crust, spreading it evenly. Cover the pie and refrigerate it for 2 hours.

    5. Make the chocolate cream: In ceramic or glass bowl covered with plastic wrap, heat the chocolate chips with the cream on High in a microwave oven for 30 second intervals, stirring after each interval until smooth.

    6. Finish the pie: Sprinkle the peanuts over the filling, then drizzle the chocolate cream over the pie. Chill for 2 more hours before serving.
