    1/2 cup of shortening
    2 cups of sugar
    2 eggs
    1 1/2 cup of sourdough starter
    1 1/2 cup of applesauce
    1/2 teaspoon of cloves
    1 teaspoon of cinnamon
    1/2 teaspoon of allspice
    1 teaspoon of salt
    1 1/2 teaspoon of baking soda
    2 tablespoons of sugar
    2 cups of flour
    1/2 cup of chopped dates
    1 cup of raisins

    Cream shortening and sugar; beat in eggs. Stir in starter, applesauce, cloves, cinnamon, and allspice. Set aside. In a small bowl, blend salt, baking soda, and sugar. Sprinkle over batter; stir in gently. Add flour; stir until smooth. Add nuts and raisins; stir well. Pour into 2 greased and floured 9 inch round cake pans. Bake at 350ºF. for 25 to 30 minutes or until tested done (toothpick inserted in center comes out clean). Cool in pan 10 minutes. Remove and place on wire racks to cool completely.

    ICING:
    1 cup of butter, softened
    2 cups of powdered sugar
    1 egg yolk
    Maple flavoring to taste
    1/2 cup of whipping cream
    1 teaspoon of sugar

    Combine butter, sugar, and egg yolk; mix well. Add maple flavoring and set aside. Whip cream with 1 teaspoon sugar and fold into icing. Frost cake.
