    1/2 cup sweet butter, softened
    1 cup sugar
    1 pkg. (8-oz) cream cheese, softened
    2 eggs
    1/4 cup milk
    1 tsp. pure vanilla extract
    2 cups sifted cake flour (Only use cake flour with this recipe)
    1-1/2 tsp. baking powder
    1/4 tsp. salt
    1 cup strawberry preserves

    Recipe



    Preheat oven at 350º. Grease and flour a 9-by 13-inch pan.

    In a bowl, cream together butter, sugar and cream cheese. Beat in eggs, milk, and vanilla extract.

    Combine the sifted flour, baking powder and salt in a bowl. Stir the flour mixture into the butter mixture.

    Spoon half of the batter into pan, spreading evenly. Spread the surface with preserves. Dollop the remaining batter over the preserves, CAREFULLY SPREAD TO COMPLETELY COVER PRESERVES. Bake for 40 minutes

    Coconut Topping:

    2 cups shredded dried coconut
    1/2 cup brown sugar
    1 tsp. cinnamon
    1/4 cup sweet butter, melted and cooled

    In a bowl, combine all ingredients and stir until smooth. Remove cake from oven and spread the top with coconut topping.

    Broil for 3 minutes or until golden brown. Let cool completely in pan before serving.
