    1960's Hollywood Strawberry Cheesecake

    To be made in a 9-inch SPRINGFORM PAN

    Line the bottom of the pan with waxed paper.

    Make the crumb crust for the bottom.

    CRUMB CRUST:

    1 CUP GRAHAM CRACKER CRUMBS
    3 TABLESPOONS SUGAR
    3 TABLESPOONS MELTED MARGARINE (stick type) (do not use whipped margarine)

    Melt the margarine. Mix melted margarine into the graham cracker crumbs, along with the sugar until all is moist looking.

    Press evenly into the bottom of the springform pan. I use the bottom of a drinking glass to help press down the crumb mixture.

    BAKE AT 325 DEGREES FOR 10 MINUTES.

    REMOVE FROM OVEN AND SET ASIDE WHILE PREPARING THE FILLING. REDUCE OVEN HEAT TO 300 DEGREES.MAKE THE CHEESE CAKE FILLING:

    2 - 8 OUNCE PACKAGES CREAM CHEESE, SOFTENED
    1/2 CUP SUGAR
    DASH OF CINNAMON
    1 TABLESPOON FRESH LEMON JUICE (NOT RECONSTITUTED)
    1 TEASPOON GRATED FRESH LEMON RIND
    1/2 TEASPOON VANILLA
    2 EGGS, SEPARATED - THE YOLKS GO INTO THE FILLING

    BEAT THE EGG WHITES SEPARATELY UNTIL THEY FORM STIFF PEAKS.

    COMBINE SOFTENED CREAM CHEESE, SUGAR, CINNAMON, LEMON JUICE, LEMON RIND AND VANILLA. ADD EGG YOLKS, ONE AT A TIME, MIXING WELL AFTER EACH ADDITION.

    FOLD IN THE STIFFLY-BEATEN EGG WHITES.

    POUR FILLING OVER THE BAKED CRUMBS. BAKE AT 300 DEGREES FOR 45 MINUTES.

    Prepare the SOUR CREAM TOPPING:
    1 CUP DAIRY SOUR CREAM
    1 TABLESPOON SUGAR
    1 TEASPOON VANILLA EXTRACT

    Combine sour cream, sugar and vanilla; spread on top of cheese cake. Return to oven and bake for 10 minutes.

    While the sour cream topping is baking make your Strawberry Glaze.

    STRAWBERRY GLAZE:

    1 QUART STRAWBERRIES (FRESH)
    1/2 CUP SUGAR
    3/4 CUP WATER

    2 TABLESPOONS CORNSTARCH
    FEW DROPS OF RED FOOD COLORING

    Wash and remove stems/caps from berries. Crush enough berries to make 1 cupful, and put into a small saucepan. Add sugar and water; cook about five minutes. Mix cornstarch with a little cold water; add to cooked water/berries and cook until thick and CLEAR in appearance (about 3 minutes). Add a few drops of food coloring.

    Arrange the remaining fresh WHOLE strawberries on top of the hot cheese cake, after you have added and baked the sour cream topping. Pour the thickened-crushed berry mixture over the fresh strawberries.

    Refrigerate (while still in the springform pan) and serve when well chilled.
