    1-1/8 cups apple cider
    2 cups raisins
    1/3 cup canola oil
    1 tsp. cinnamon
    1 tsp. nutmeg
    1/2 tsp. allspice
    1/2 tsp. salt
    2 cups all-purpose flour (sifted)
    1 tsp. baking powder
    1 tsp. baking soda
    1 cup chopped pecans

    Recipe



    In a saucepan, simmer (do not boil) apple cider, raisins, oil, cinnamon, nutmeg, allspice and salt for 8 minutes. Transfer mixture to large bowl and cool completely before proceeding.

    Preheat oven to 325º. Butter bundt pan.

    To cider-raisins mixture, add flour, baking powder, baking soda. Stir in pecans.

    Pour into pan. Bake for one hour and 15 minutes.

    Cool in pan for 10 minutes.
