    Apricot Upside-Down Cake

    3/4 c butter
    1/2 c brown sugar
    1/2 tsp cinnamon
    1 1/2 c drained canned apricot halves
    1/2 c sugar
    1 egg
    1 1/2 c flour
    2 tsp baking powder
    1/2 tsp salt
    1/2 c milk

    Recipe



    Melt 1/4 c butter in square 9x9x2" pan. Sprinkle with brown sugar and cinnamon.
    Arrange apricots rounded side down, in pan.
    Cream 1/2 Cup butter with sugar until light. Beat in egg.
    Blend dry ingredients and add alternately with milk, beating until smooth. Spread on apricots.
    Bake 375° 30 minutes.
    Let stand for 10 minutes.
    Turn out on serving plate and serve with whipped cream.
