    Blueberry Angel Food Cake Rolls

    1 package Angel Food cake mix
    Confectioners sugar
    1 can (21 oz.) blueberry pie filling
    1/4 cup confectioners sugar

    Preheat oven to 350. Line two jelly-roll pans with foil. Prepare cake mix according to package directions. Divide into pans. Spread evenly. Cut through batter with knife to remove any air bubbles. Bake at 350 for 15 minutes or until set. Invert cakes at once onto clean dishtowels dusted with confectioners sugar. Remove foil carefully. Roll up each cake with towel, starting at short end. Cool completely. Unroll cakes. Spread about 1 cup blueberry pie filling to within 1 inch of edges on each cake. Reroll and place seam side down on serving plate. Dust with 1/4 cup confectioners sugar. Garnish with mint leaves or blueberries, if desired.

    Variation: substitute other fruit pie fillings
