    Blueberry Upside-Down Cake

    2 Tbsp butter
    1 cup firmly packed brown sugar
    2 cups blueberries, rinsed and drained
    3 egg yolks (beaten)
    1 cup sugar
    5 Tbsp milk
    1 cup sifted all-purpose flour
    1 tsp baking powder
    1/2 tsp salt
    3 egg whites (beaten)
    Whipped Cream

    Recipe



    Melt butter in the bottom of a 9x9x2 baking pan
    Sprinkle with brown sugar
    Add blueberries.
    Beat egg yolks and stir in sugar
    Beat in milk, flour, baking powder, and salt
    Beat egg whites until stiff
    Fold egg whites into cake batter
    Pour batter over the blueberries
    Bake in preheated oven -350 degrees- for 45 minutes, or until cake springs back when lightly touched
    Loosen edges; turn out on a serving platter
    Cut into squares; serve with sweetened whipped cream
    Makes nine 3-inch squares
