    2 cups sugar
    1-1/3 cups Cake flour (sifted 3 times)
    3/4 cup Cocoa (use European type Cocoa)
    1-1/2 tsp. baking powder
    1-1/2 tsp. baking soda
    1 tsp. salt
    2 eggs
    1 cup milk
    1/2 cup vegetable oil
    2 tsp. pure vanilla extract
    1 cup boiling water

    Peppermint Filling

    1-1/2 cups cold whipping cream
    1/2 cup powdered sugar
    1/2 tsp. mint extract (use peppermint oil)
    3/4 tsp. pure vanilla extract
    several drops red food color

    Chocolate Velvet Frosting

    1 cup sugar
    4 Tbsp. cornstarch
    pinch of salt
    1 cup boiling water
    3 oz chocolate melted
    3 Tbsp. butter
    1 tsp. pure vanilla extract

    Recipe



    Heat oven to 350º. Grease and flour 3 9-inch round baking pans.

    In large mixer bowl, stir together dry ingredients. Add eggs, milk, oil and vanilla extract; beat on medium speed for 2 minutes. Stir in the boiling water( batter will be thin). Divide batter among the 3 pans. Bake 25 minutes. Cool in pans 10 minutes. Cool completely.

    FILLING:
    In small mixer bowl, beat whipped cream and powdered sugar until stiff. Fold in peppermint extract, vanilla and red food color until evenly blended.

    FROSTING
    Mix sugar, cornstarch and salt in saucepan. Stir in water slowly and cook over low heat, until mixture is smooth. Stir in butter and chocolate. Cook until thick. Add vanilla ex and cool

    Spread the filling between layers. Spread frosting over top of torte. (note: not on sides of cake)
