Easy Carrot Coffee Cake

1 1/4 C All-Purpose Flour
1 Cup Sugar
1 1/2 Tsp. Baking Powder
1 Tsp. Salt
2 Tsp. Ground Cinnamon
1/4 C Vegetable Oil
2 Whole Eggs
2 Tsp. Vanilla
1 Cup Shredded Carrots
1 Cup Chopped Pecans
1/2 C raisins
Recipe
Combine first 8 ingredients in a large mixing bowl; beat 1 minute
at low speed of an electric mixer.
Beat 2 minutes at medium speed of an electric mixer. Stir in
carrots, pecans and raisins.
Spoon batter into a lightly greased 8 inch square baking pan.
Bake at 325 for 40 minutes or until
a toothpick inserted in center comes out clean. Sprinkle cake with
powdered sugar, if desired.
