    Fluffy Orange-Coconut Cake

    3 1/2 c. sifted cake flour
    2 c. sugar
    2 tblsp. baking powder
    1 1/2 tsp. salt
    1 c. shortening
    1 1/3 c. milk
    1 tsp. vanilla
    1 tsp. orange extract
    1 tsp. grated orange rind
    4 med. eggs

    Recipe



    Sift dry ingredients into bowl. Add shortening and milk. Beat at low speed to blend. Beat 2 min. at med. speed. Add flavorings and orange rind. Add eggs, 1 at a time, beating after each addition. Beat at mod. speed 2 more min. Pour into two 9" round cake pans. Bake at 30-35 min. at 350. Cool and spread with filling between layers. Frost with Buttercream Icing.

    Filling;
    Combine 1 c. condensed milk, 1 c. sugar, 3 egg yolks and 1 stick butter in sauce pan and bring to a boil. Continue cooking till thickened. Add 1 1/2 c. shredded coconut and 1c. nuts, chopped. Cool.

    Buttercream Frosting;
    Cream 1/2 c. soft butter. Add 1lb. powdered sugar, 1/3 c. milk, 1/8 tsp. salt, 1 tsp. vanilla, 1/2 tsp. orange extract and 1/2 tsp. coconut extract and blend well. Use to frost sides and top of cake.
