    Joan River's Apricot Coconut Cake

    24 plain coconut cookies (2" size) crumbled
    Place 1/2 of the crumbled cookies in bottom of 9" pie plate
    Soften 2 envelopes unflavored gelatin in 1/2 cup cold water
    Cook over low flame until dissolved
    Puree in blender with a 16-oz. can of apricots in syrup
    Add 1-1/2 cups butter & 3 cups powdered sugar. Blend until well mixed
    Add grated rind of 1 orange & juice of 1 lemon
    Fold in 1 cup mini marshmallows & 1-1/2 cups chopped nuts
    Place 6 egg whites in a large bowl. Add 1/8 t. salt; beat until stiff
    Gradually beat in 1/2 cup of sugar
    Fold egg white mix into gelatin - apricot mix. Spoon over cookie crumbs
    Sprinkle remaining cookie crumbs over top. Chill overnight.
    Garnish with whipped cream
    Sprinkle more chopped nuts & flaked coconut
