2 & 1/4 cups mixed dried fruit.
2 eggs.
2 tablespoons butter.
1 & 1/2 cups sugar.
3 cups self-raising flour.
1 & 1/2 cups boiling water.
lemon essence. (a sprinkle).
Recipe
Method: place fruit, sugar, butter & essence in a basin. pour boiling water over, and let stand to cool. stir in sifted flour and beaten eggs. place in 3 greased log tins in lower shelf of oven, and bake at 375 (190) degrees for approx. 45 minutes. May be iced with lemon icing, and sprinkled with coconut if desired, but equally tasty without.
