1/2 c. butter
1 c. sugar
1 c. fresh lime juice
4 egg yolks
2 eggs
1 T. grated lime peel
2 drops green food coloring (optional)
9 inch pie shell, baked and cooled
1/2 c. toasted coconut


Recipe



Melt butter in saucepan over low heat. Whisk in sugar, lime juice. egg yolks, eggs and lime peel and cook, stirring constantly, until mixture thickens. Stir in coloring. Let cool to room temperature. Pour into pie shell. Top with toasted coconut.
