Mocha Raisin Cake

2 cups boiling water
2 heaping teas instant coffee powder
2 cups sugar
1 cup seedless raisins, chopped
1/2 cup butter
1 teas pure vanilla extract
2 cups all-purpose flour (sifted)
3 Tbsp. cocoa
1/2 teas baking soda
2 teas baking powder
1/2 salt
1 teas ground cinnamon
1 teas ground nutmeg(i use fresh)
1/2 teas ground cloves
1/2 teas. ground allspice
confectioner's sugar
Recipe
Butter a 10 inch square pan and dust with cocoa
Pour boiling water on instant coffee powder. Add 1 cup of sugar and chopped raisins. Simmer this over low heat for 10 minutes, set aside to cool.
Cream butter with second cup of sugar until light and fluffy. Add vanilla extract and the eggs, one at a time, beating well after each addition.
Sift flour, cocoa, baking soda, baking powder, salt and all the spices together. (It may seem like an overabundance of spices, but don't SKIMP). Beat a little into the creamed mixture then add a little of the coffee mixture. Repeat until all used.
Pour batter in pan. Bake at 350º for about 60 minutes. Cool on rack ten minutes. Dust top with confectioner's sugar
