Mock 'N Easy Key-Lime Pie

1 can Eagle Brand Condensed Milk
1 small can concentrate limeade
1 10 or 12 oz container Cool Whip
(they keep changing the weight on
these!)
1 tsp lemon extract (optional)
2 ready-made graham cracker crusts
(I prefer Keebler's)
1 lime, thinly sliced (optional) for
best presentation!
Recipe
Hand mix first 2 ingredients until smooth. Add next 2 ingredients, mixing until creamy and smooth. Divide this filling into the 2 piecrusts. Use the clear
plastic covers from crust package, inverted as a 'dome', to cover the pies. Chill in fridge overnight (let those great flavors blend!), but you can use
within 2 hours.
For Best Presentation:
Heat to boiling 1/4 cup water, add 1/4 cup sugar and simmer for 5 minutes, or until sugar is desolved. Let cool. Place in small bowl, add sliced limes,
cover and chill in fridge for at least 2 hours (also best if can be chilled overnight). Before serving, cut lime slices half way from middle, pat dry, give a half twist and place on top of pies.
Now....serve, sit back, enjoy the pie and the accolades!
Note: If you freeze one of the pies, be sure to seal the 'dome' lid back under the foil edges of pie dish; keeps much fresher this way. And by the way, when
I mention brand names, it's because I've tried others and they aren't as good as the brand named.
