    Topsy-Turvy Pineapple Cake

    7 Tbsp. sweet butter, softened
    2/3 cup firmly packed light brown sugar
    8-oz can sliced pineapple, drained, juice reserved
    1-1/4 cups all-purpose flour
    1/2 cup sugar
    1-1/2 tsp. baking powder
    1/4 tsp. salt
    1/3 cup reserved pineapple juice
    2 Tbsp. milk
    2 egg whites
    1/2 tsp. pure vanilla extract

    Preheat oven at 350º

    Melt 3 Tbsp. butter in a 8-inch cake pan. Sprinkle brown sugar over melted butter. Place 4 pineapple slices in the pan, pushing them gently into brown sugar mixture.

    In large bowl, combine flour, sugar, baking powder, salt and remaining 4 Tbsp. butter, pineapple juice, and milk. Beat until well mixed. Add eggs whites and van ex. Beat until smooth.

    Pour into pan, bake for 30 minutes. Invert immediately onto a cake plate (IF YOU WAIT UNTIL COOL. . . THE PINEAPPLE WILL STICK TO BOTTOM OF PAN)
