    3/4 cup flour
    2 tsp. cinnamon
    1 tsp. salt
    9 (1 1/4 cups) egg whites
    3/4 cup sugar
    9 egg yolks
    2 tsp. vanilla
    3/4 cup sugar
    2 cups finely chopped walnuts

    Combine flour, cinnamon, and salt.

    Beat egg whites in large bowl until soft mounds form. Gradually add 3/4 cup sugar. Continue beating until stiff, straight peaks form. Do Not Overbeat!

    Combine egg yolks, vanilla and 3/4 cup sugar in small bowl. Beat until thick and lemon colored. Stir in dry ingredients.

    Fold batter gently but thoroughly into egg whites using a wire whisk or rubber spatula. Fold in nuts. Turn into ungreased 10-inch tube pan.

    Bake at 350 degrees F for 55-65 minutes. Invert immediately. Cool completely.

    Frost with vanilla glaze, sprinkle with powdered sugar or serve with whipped cream.
